R&D Pro Tip
For RTD beverages, pre-blend matcha with a small amount of hot water (70°C-80°C) and shear-mix before adding plant milks. Adding 0.03% ascorbic acid (Vitamin C) prevents oxidation and keeps the latte bright green for up to 14 days in cold storage.
